Vĩnh Phúc Province

Vĩnh Phúc is Hà Nội's immediate northern neighbour - a province of low hills, ancient pagodas, and the Tam Đảo hill station that has served as the capital's highland escape since the French colonial era. Tam Đảo's misty mountain town sits at 900m elevation above a national park of rare primates and cloud forest, while the plains below contain some of the Red River Delta's most important temple complexes. For Hanoians, Vĩnh Phúc is the weekend retreat; for visitors, it's an easy half-day from the capital.

Chayote grown in the cool mountain air of Tam Đảo - stir-fried with garlic and oyster sauce or used in soups, the highland altitude produces a crispier, sweeter chayote than lowland varieties, so abundant that Tam Đảo restaurants serve it at every meal and vendors sell bags of it at the mountain entrance
